Spice up your plate and palette with this spicy pineapple salsa. It goes great on brown rice or with grilled tofu.
Ingredients: 3 c. fresh pineapple, diced ½ small red onion, diced ½ medium red bell pepper, diced ½ medium orange bell pepper, diced ½ - 1 medium jalapeño pepper, seeds removed and finely diced 1/3 c. fresh cilantro, chopped 3 T. fresh lime juice Sea salt and black pepper, to taste
Prepare the pineapple salsa by combining all ingredients in a large, non-reactive bowl. Cover and let the flavors blend together.
